What better way to start of the morning but with a egg sandwich on some fresh home made Whole Wheat Honey Oat Bread? Eggs are something that I love so much either it be scrambled, fried in bacon grease, poached, well you get the idea.
My fondest memory of eggs would have to be when I would spend time at my grandmothers. We would spend weekends with the whole family at her ranch, and I mean the WHOLE family! Aunts, Uncles, Cousins, everyone would go. There was 3 different houses that we could sleep at when we would all visit and I feel like we would all end up wanting to stay in the same house and would end up rotating who slept in which house the next time we would all go. My favorite house was the one we called the Old House, this was because it was old, there is no bathroom in this house even and you would have to walk over to the other to take a shower and use the toilet.

Waking up in the morning while there was filled with the smell of bacon, eggs, and biscuits cooking every morning. My Aunt and Uncle would always be the first up in the morning and would start making breakfast for everyone, I am sure that we would go through at least a dozen and a half of eggs, 3 or 4 cans of biscuits, and who knows the amount of bacon. You were one of the lucky ones if you actually got to sit at the table also in the morning and wasn’t sitting in a chair in the other room or on the steps of the porch in the morning.
As you can see I ended up getting to sit at the table ( more like on the table) this morning and was very excited about getting to be so close to all of the food that was being cooked.
Back to the Egg Sandwich, I feel like a egg sandwich has to have a few things to make it just perfect.

One thing that really makes all of the difference is having a cast iron skillet
I leave mine in the oven when I am not using it. I have had a few people come over and see me pull it out of the oven to cook eggs on it and they freak out once they see me stick it straight back into the oven after using it. Once they taste the eggs though they realize that they have been missing out on some really amazing things by not using a cast iron skillet.
I keep a jar in the fridge with bacon grease in it to use for greasing my pan and to add some great flavor to many different dishes, even cookies!
First you want to throw a spoon full of that saved bacon grease onto the cast iron skillet and heat it up nice and hot. Once the skillet it hot break your eggs into the skillet and you can top with whatever you would like, some mornings I cut up onions and garlic, others I just stick to seasoning the eggs with the Spicy TexJoy Steak Seasoning.
I know we do not have this in New York so I end up having to get my mother to send me some whenever I run out, but it is simply some of the best seasoning. If you have someone who lives down south and can send you some I recommend that you do this ASAP, you don’t know what you are missing out on.
After the eggs are nice and cooked to your liking turn off the heat and put them on the real mayo covered home made bread that you made.
