I recently made some other Gluten & Dairy free Peanut Butter Cookies but I wanted to make some more this time but change them up a bit more. I really wanted to make some cookies this time that are chewy since the last ones weren’t. These came out just like I wanted! My dad really loves oatmeal cookies and I am pretty sure that I could even give these to him and he wouldn’t know that they are gluten free. I love oatmeal cookies probably as much as my dad and adding peanut butter into that mix just makes it even that much better. I had a lot of fun times with my dad when I was younger,he pretty much
acted like big kid when I was growing up is still a big kid to this day.
I have too many good memories with my dad. He loved to ride dirt bikes, jet ski, go carts, anything at all really and would put me on them when I was really young with him. I learned to ride at a very young age and had my share of trips to the ER. He always made me do at least one lap around the whole field once I got home from getting stitches so that I wouldn’t be scared to get back on. I would have to say that if he didn’t make me do that I probably would have been scared and never had gotten back on whatever it was that made me go to the ER that day.

OK enough about that, back to the cookies! This makes 32 cookies and you will want to preheat your oven to 350˚
Peanut Butter – 1 cup
Brown Sugar – 1 cup
Oatmeal – 1 cup
Baking Soda – 1 tsp
Vanilla – 1 tbsp
Eggs – 2
This recipe is so simple even if you don’t really know how to bake you will be able to make these cookies.
Put all of the ingredients in a bowl and mix together adding the oatmeal till the last thing to mix together.
Once you have it all mixed you will be able to scoop out a tablespoon size out and form into a ball and place onto a cookie sheet lined with wax paper.
Bake the cookies for about 10 minutes, make sure to pull them out when the middle is still just a little underdone, they will cook a bit more while they are cooling. Make sure that you let the cookies cool for a little before moving to a wire rack to fully cool.
