I haven’t had a granola bar in such a long time and have been needing something to be able to grab and throw in my back to have to snack on when I am running around. These granola bars are so good and crunchy, just like I enjoy mine, I have never been one who enjoys the chewy kind of granola bars and I figured that I could add some flour to my Granola Cereal recipe and make them into bars so when I can’t sit down and have something healthy I can just grab and eat on my way out the door, or to hold me over for when dinner is ready.
Old Fashioned Oats – 4 Cup
Whole Wheat Flour – 1/4 cup
Coconut – 1/4 cup
Brown Sugar – 2/3 cup
Cinnamon – 1 tbsp
Canola Oil -1/2 cup
Vanilla – 2 tbsp
Honey – 1/2 cup
Combine all of the dry ingredients into a large bowl and mix together, in a separate bowl mix all of the wet ingredients together and pour over the dry ingredients. It will take a bit of mixing to get all of the oats fully coated.
Once everything is mixed together pour the mixture into a 13x9x1 inch pan that is covered with parchment paper and press into the pan.
Place into a 300˚ pre heated oven and bake for about 35 – 40 minutes, make sure to check it though at about 25 to make sure that you aren’t burning the edges. Once it is cooled take them out of the oven and place on a wire rack to cool for t least 2 hours so that it is easier to cut.
Wrap them in seran wrap to be able to grab and go with a little snack whenever you need something fast.
