Grab and go Breakfast Egg Muffins


Making things for the family when I am not in town is something that I kind of have to plan out and make sure that there is going to be enough of for the time I am gone. These things also need to be something that can be thrown in the microwave or toaster oven for only a few minutes and still be filling and tasty. If something can not be re heated  the only things that will be eaten will be a peanut butter and jelly sandwich  for pretty much every meal. It’s not that they don’t know how to make anything else, rather they just prefer to only eat that if they have to make something. I would rather that no be the case and they eat something a bit better then that.

Ingredients:

Eggs – 8

Bacon – 6 pieces

Onion – 1 chopped

Garlic – 2 cloves minced

Chives

Cheese

Salt

Pepper

Whisk all of the eggs  together with salt and pepper then add the bacon, garlic, onion, and chives to the mixture till all is combined well.

In a well grease muffin tin pour the eggs and top with cheese and place into a 350˚ pre heated oven for about 25 minutes.

These are wonderful to wrap in foil and then place into the freezer so that when you need to head out the door to work you can grab them and place in the toaster oven to re heat. You can also microwave them wrapped in a paper towel for about 2 minutes.
