Today I was craving cookies after I watched everyone else in my house eat a whole pizza and I had my salad. Man the smell of the pizza was so wonderful it took everything in me to not eat any. I kept telling myself, ” You know what pizza tastes like, it’s not worth the pain after though”. When I walked into the pizza place at the end of the block to pick it up I wanted to tell the guy to just throw another slice on the side for me to eat on my way home so no one would know that I even ate any, but I would know and it would only be hurting myself so I didn’t do it. Anyways back to the cookies, I wanted cookies since everyone else was eating the yummy pizza that I couldn’t have, I decided to try to work on some to fill my craving for them and this is what I came up with.
Tapioca Flour – 1 cup
Egg – 1
Oatmeal – 3/4 cup
Unsweetened Apple Sauce – 1 cup
Unsweetened Coconut – 1 cup
Liquid Stevia – 12 drops
Vanilla – 1 tbsp
Mix all the wet ingredients together well in a large bowl, in a separate bowl mix all the dry ingredients, pour the wet ingredients into the dry and mix until a dough if formed. I found it easiest to just grab the dough with my hands an form little balls and place onto a baking sheet. Bake in a 350˚ oven for about 15 minutes, the coconut will get a bit toasted looking.
I made two batches of these, one with and one without the coconut and by far the ones with the coconut was the best. They still do not have a cookie like texture but it worked when I was really craving something, I am going to work on this and see what I can do to change it and make it more like a cookie and taste even better.
