World’s Best Chocolate Chip Coconut Oatmeal Cookies

I have been posting a lot of sugar free and gluten free things lately but I have still been baking things that are not sugar free and gluten free for the rest of my house. I can’t deny them of the sugary goodness that I can come up with just because I am not allowed to eat any of it right now. These cookies are really some of the best chocolate chip cookies that I have made so far. They have so many different flavors and this recipe makes so much dough that I wrapped it up and saved it for later use.



Butter – 4 sticks softened 

White Sugar – 2 cups

Brown Sugar – 2 cups

Eggs – 4

Vanilla – 2 tbsp

Flour – 4 cups

Baking Soda – 2 tsp

Old Fashioned Oats – 4 cups

Coconut – 2 cups

Chocolate Chips – 1 bag 

White Chocolate Chips or Peanut Butter Chip  – 1 bag

Cream together the butter and the sugar, make sure you do not try to warm the butter in the microwave  just set it out on the counter for a little while until it is soft. Then add the eggs and vanilla and mix well. In a separate bowl mix the flour, baking soda, and oats before you add to the butter and sugar mixture so that it is all combined well or you will not get all of the ingredients mixed together very well.  Once the dough is formed you can then fold in the coconut and the chocolate chips, this is a really  thick dough and a lot of it as well so you will have to mix it very well to evenly distribute all of the chocolate chips and coconut. Then you can scoop spoon full of the dough onto your cookie sheet and them place into a 350˚ pre heated oven and bake for about 10 minutes. I found with the second bit of cookies I cooked  at 8 minutes are the best because they are very chewy in the middle still but if you want a more crisp cookie you can bake them for 10 minutes. 

Make as many cookies as you want but the best idea is to place the dough into clear plastic wrap and wrap the dough like you see in the grocery stores and place in the refrigerator this way all you have to do is take it out and slice to place onto your cookie sheet to have fresh baked cookies at anytime you want without all the hassle of making the dough.
