Closest thing I have made so far to bread that was not bread would have to be a bun made out of cauliflower. I know that sounds crazy I even thought about it for a while before I really went and tried it since when I tried to make a cauliflower pizza crust it kinda fell apart and I wasn’t sure what I did wrong. This though held together very well, maybe I just baked it long enough this time and it worked.
Cauliflower – 1 half riced
Eggs – 1
Black Beans – 2 cans drained and rinsed
Onion – 1 chopped
Garlic – 3 cloves chopped
Egg – 1
Serrano Pepper – 1 chopped
Gluten Free Oats – 1 cup
Carrots – 3 large sliced
Olive Oil – 1 tbsp
TexJoy Steak Seasoning
I know You are probably looking at the list and thinking that this is too much to deal with but it really isn’t that bad at all once you start on it.
Take the fries and wash and slice them and then put into a bowl and pour the olive oil over and toss till they are all coated and the spread out onto a wax paper lined baking sheet and then sprinkle with TexJoy Steak Seasoning and place into the 350˚ pre heated oven for about 45 mins or until cooked.
While the fries are baking you can start on the buns. Take the cauliflower and place into the food processor until it is the consistency of rice after add the eggs, basil and garlic to taste so that it forms a consistency such as hamburger meat when you are going to make a patty. You can also add some cheese into the mixture as well if you would like at this time but I ran out and so I didn’t get to but did it before and it was wonderful with some parmesan cheese. On a wax paper lined baking sheet form your top and bottom buns and place into the oven with the fries and bake for about 40 minutes or until the tops have browned.
While everything is baking in the oven you can start making the black bean patties Take the two cans of well rinsed and drained black beans and pour into the food processor and add the eggs, onions garlic, peppers and process till all comes together and resembles a bean dip. Fold in the oats added more if needed to make it stick together or you could use bread crumbs if you wanted but since I wanted something gluten free I used the oats. If using the oats let it sit for a few minutes before cooking so that the oats can soak up some of the moisture. This is where you hands will get messy again, scoop out some of the mixture and form into a patty and place onto the hot skillet and start cooking, flip after about 3 – 5 minutes when you notice that the bottom is cooked and cook the other side.
Once everything is cooked assemble like any other burger you would make, I liked mine with spinach on top of it as well.
I got half way through the burger and was too full to be able to finish the rest of it so I had to save it for the next day to eat. The fries are one of my favorite things also to have, I used to love sweet potato fries the best but I think that carrot fries have beat them for now.
