Gluten and Sugar Free Breakfast Cookies

Sometimes you just want to have a cookies for breakfast and most of the time you can’t well shouldn’t do that because they are so packed full of sugar and other things that just are not good for you to have. Even when you pick of those breakfast togo bars at the grocery store they are still packed full of sugars that are really going to just make you more hungry as the day goes on. I came up with something that will fill you up and doesn’t have all of the other things that are just going to make you want to grab sometimes else right after you eaten. Normally my mornings are a bit of a rush out the door with all the things going on and so these are prefect way to still eat something that is healthy and tasty when I need to be on the go, I have stuck a few in my pocket before on my way out the door many mornings. 


Banana – 2 over ripe

Unsweetened Apple Sauce – 1/4 cup

Unsweetened Cocoa – 2 tbsp

Gluten Free Oats – 1/2 cup

Unsweetened Coconut flakes – 1/4 cup

Stevia – 1 packet (if you want to make sweeter)

Mash the bananas well and mix with the apple sauce and cocoa until combined and then add the oats and coconut into the mixture and drop onto a cookie sheet and bake at 350˚ for about 15 minutes.


These are something that are great for a snack when you are on the go and need something to hold you over till the next meal or even can be eaten as breakfast in the morning.



Whoever said you can’t have a cookie for breakfast was wrong these will give you enough energy to start your day and wont give you a sugar crash either.
