Cajun Spiced Bacon Pancakes Topped with Honey


Happy Fathers Day!

What did everyone do for today? How did you spoil that man who helps us moms get everything done and not loose our minds. Well for me I decided to go all out on the cooking today. Breakfast food are always one of the funnest things to make because the options that you have with what you can cook. I wanted to make something that was sweet, yet had a kick to it as well as jus being all around delicious. I have getting things in order so that I can go down to where I grew up at the end of the month and that really played a part in this breakfast that I made today. Also trying to find a way to say that you appreciate someone is kinda hard sometimes but I felt that bacon is the proper way to show that appreciation, because really who doesn’t enjoy bacon.

Ingredients :

Hickory Smoked Bacon – 8 pieces

Onion – 1 small chopped

Celery – 1 stalk chopped

Bell Pepper – 1 half chopped

Fresh Chopped Chives

Corn – 1 cup

Cheese – 1/2 cup

Flour – 1 cup

Egg – 1 beaten

Baking Soda – 1 tsp

Salt – to  your taste

Cayenne Pepper

Cumin

Peper

Water – 2/3 Cup

Sour Cream – 1/4 Cup

Bacon Grease – 2 tbsp

Take your bacon and cook till it is crispy adding the onions on top at the end so that they cook and also soak up some of the wonderful taste of the bacon grease, once it is done set aside to drain leaving a scoop of onion and 1 piece of bacon to use for the topping.

In a medium bowl mix together the flour, egg, baking soda, water,  and spices till a thick pancake like batter is formed. Fold in the Bacon, vegetables, sour cream, cheese, and bacon grease from the bacon that you cooked and combine well.

Heat a skillet  and add the batter using a 1/4 measuring cup and cook each side of the pancake till done. Top the pancakes with the bacon and onions that were placed aside and drizzle honey over.

  1. Dad would rather have a cookout at home than go to any restaurant so that’s what we did. Had a great time!
