Molasses Gingerbread Cookies


Gingerbread cookies are always the go to cookies that should be eaten during the Christmas holidays. The smell alone of these baking in the oven while you are decorating the Christmas tree will put anyone who is the Grinch in your family in the mood to help out.  Sure you can go out and buy a package of gingerbread cookies that are covered in frosting but these molasses gingerbread cookies have so much more flavor with just enough crunch on the outside that you will never go back to buying the packaged ones ever again.

Growing up my mother was always one to be baking something and when the holidays rolled around the house would be filled with smells of all the cookies and cakes she would make. We would have so many cookies sitting around the house that I don’t see how we all weren’t huge, well maybe we weren’t huge for the fact that we also had so many chores to do that we were kept very active and burned it all off.

Molasses Gingerbread Cookies

Ingredients:

Egg – 1

Butter, Melted – ¾ cup

Granulated Sugar – ½ cup (extra set aside for rolling)

Brown Sugar – ½ cup

Molasses – 1/3 cup

Flour – 2 ¼ cup

Baking Soda – 2 tsp

Ginger –  1/4 tsp

Cinnamon – 1 tsp

Nutmeg – 1/4 tsp

 

Sift together your flour, baking soda, ginger, cinnamon, and nutmeg and set aside.

Mix together the sugars, egg, butter, and molasses until well combined, I tried doing this once by hand and it takes a bit more work so be easy on yourself and just throw it all in your mixer. Slowly add in your flour mixture into the molasses mixture until all is combined. I found that I needed to take the dough out and kneed together by hand to get the last bit of flour combined. Cover the dough and then place in the refrigerator for at least an hour so that it will not spread too much when baking.  Take about 2 tablespoons of dough and roll into a ball and then roll around in bowl of sugar before placing them on a baking sheet. Place the cookies into a 350 degree preheated oven and bake for about 10 minutes and then place them on a rack to finish cooling. Make sure not to over cook these cookies, as they will harden up once they are cooled.
